Spending a whole year away from home has given us a deeper appreciation for our relationships with the friends and family we left behind.

Sometimes though, the thought of the 1,000+ kilometres separating you from those you love makes the distance feel 1,000x greater. Especially when you’re used to those important people being just a short drive away at any time.

Now that our day of return is inching closer and closer, we can’t seem to stop daydreaming of home, the people we’ve missed and the special moments we’ve missed out on.

For one, a ridiculous number of our friends have given birth to some gorgeous babies that we can’t wait to cuddle. (Seriously ladies, how did you all manage to synchronise that?).

Not to mention the smaller milestones like birthdays and Christmases… The special moments. The family traditions that, despite skype calls and messaging, can never be fully experienced via pixels on the screen.

So when unexpected opportunities come up and you suddenly get to see some of those people again, before you come home, it’s a big deal.

Like when we spent this Christmas and New Year just gone in Singapore with our friends. For a few weeks there we could drop our bags and take a break from the journey – and it felt almost like being ‘home’ again, if only for a little while.

And yet all too soon we were packing the bags and waving goodbye again, to wander off into the unknown once more.

So when we found out that one of our best friends scored a 12 month gig teaching English in Himeji, Japan, it left us with a tough decision:

  • Not see her for literally two whole years. 🙁

Or:

  • Squeeze in another trip to Japan on our way home to visit her. Eeeeee!

It was just the perfect excuse to have the best of both worlds: visit our friend AND spend more time in our favourite country.

Of course in our opinion the best way to catch up with old friends is a shopping spree and eating our way through piles of delicious local food.

Chilli Garlic Spaghetti with Burdock

This Chilli Garlic Spaghetti was one of our favourite discoveries from our time spent together, and so we decided to recreate it in all its spicy, savoury, pasta-y glory.

Featuring burdock root, our all-time favourite quirky Japanese ingredient, and amped up with a blend of soy sauce, mirin, chilli, olive oil and sesame, this dish has a real flavour kick while still being nice and light on the tummy.

Ingredients

  • 500 g spaghetti
  • 2 burdock roots julienne sliced or [sasagaki] sliced
  • 2 cloves garlic finely chopped
  • ½ brown onion finely sliced
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • Salt to taste
  • Pepper to taste
  • Sesame seeds garnish
  • Chilli flakes garnish
  • ¼ cup olive oil
  • 1 tsp sesame oil

Instructions

  • Cook the pasta according to packet directions and drain.
  • Meanwhile, heat the olive oil in a fry pan. Add the garlic and onion, and stir fry until fragrant. Add the burdock root and continue to cook until it begins to soften.
  • Add the soy sauce and mirin then stir through. Season with salt and pepper and continue to cook for a few minutes.
  • Add the pasta to the pan, drizzle with sesame oil and stir until pasta and sauce are evenly mixed.
  • Transfer to serving dishes and garnish with sesame seeds and chilli flakes.
  • Serve immediately.

Your best bet for sourcing burdock root is your local Asian market, however if you’re unable to get your hands on burdock, asparagus is a tasty substitute.

    What a breath of fresh air. It’s so awesome to see you guys use burdock, something so delicious yet so infrequently used in Western dishes. I love it! I’ve been away from my family since I got married almost a decade ago so I totally get you. Good news is that I’m going back to Asia in two months and it will be a food adventure for sure. That’s how we catch up. Through food. :p

    I’ve never seen or heard of burdock before even at my Asian store. I’ll have to hunt more for it. So intriguing.

      Yes, if you can’t find it – try a garden shop! It’s apparently very easy to grow and we’re looking into it ourselves when we get back home.

      Yes, definitely recommend it. If you can’t find it though – asparagus will do just fine. 🙂
