Since we got home last week we’ve been gradually settling into the routines of a non-travelling life.
There’ve been those pesky bills to pay, those appointments with doctors and dentists to schedule, and all the other niggly things you forget actually exist when travelling for a long period of time.
So to perk us up in the middle of yesterday’s Day of Gettin’ Things DONE we needed a quick and easy dish to tide us over for lunch.
Cue this addictive Easy White Bean Salad.

He had a whole heap of kitchen tricks up his sleeve that he’d learned from his mother, which made for an awesome time cooking and eating together during our short stay in Burgas. (A surprisingly gorgeous city on the Black Sea Coast.)
Easy White Bean Salad
This salad is ridiculously simple to prepare. Literally open can -> drain beans -> throw in red onions, herbs, olive oil and seasonings -> BAM. Side salad DONE and it’s time for a shot of Bulgarian Rakiya.
Plus those little white beans are packed full of protein and healthy. When things taste this good AND they’re this healthy as well, they’re definitely a winner in our books.
Using gorgeous fresh basil leaves was a no brainer when we could secretly pinch a few off our Wandermum’s basil plant at the back of the garden (shhhhh), but you could easily substitute that with your favourite fresh herb.
Martha recommends a few awesome flavour pairings that we can’t wait to experiment with, such as mint if you’re dishing it up alongside lamb, dill with fish, and basil with chicken.
Now would you look at that? It’s like 4 salads in 1. 😉
Picnics, BBQ’s, healthy mid-afternoon snack-fests… White Bean Salad is up for it all.
Feel free to make it a day ahead so you’re super prepared and don’t come empty handed to your best friend’s house party. The flavours will mingle through the beans and taste extra awesome when it’s time to get stuck in.
Or seriously, you can do what we did and throw it together in less than 5 minutes for a quick lunch on the go.
Keep a can of beans in the cupboard and you’re set for the next hunger craving, whenever and wherever that may be.

- 400 g cannellini beans drained
- ¼ red onion finely chopped
- 4 basil leaves finely sliced
- 2 tbsp extra virgin olive oil
- salt and pepper to taste
- Place white beans in a serving dish. Top with red onion and basil.
- Drizzle with olive oil and season with salt and pepper to taste.
