French Zucchini Salad (Salade de Courgettes) is a light, fresh and summery salad that makes for the perfect side dish. Ribbons of zucchini meet with fresh mint, garlic and natural yoghurt in this super simple 5 minute recipe.
Do you ever come across those recipes that just make you feel good?
Those that bring back memories of good times?
Of breathing in fresh country air, enjoying the warmth of the setting sun, of indulging in good food and good wine with new friends?
That is just what this quick and simple salad does for us.
Well, I guess it kinda was a pretty good day, too. 😛
We’d just spent the afternoon in the countryside of France, sipping gorgeous whites and reds at Terroir Feely Wines, chatting with the winery’s lovely owners Caro and Sean, and their two children Sophia and Ellie.
Afterwards, we got stuck into their kitchen to try our hands at a few French recipes.
With boxes full of fresh vegetables from the garden and locally sourced produce on all sides, we had plenty of options ahead of us.
But what to choose?
Caro had a tasting room full of wine glasses to tidy before the next busy day, so she left us to our own devices with a glass or two of wine and a few suggestions to help us on our way:
(I can still hear her enthusiasm now.)
“How about grating the courgettes and mixing with some natural organic yoghurt from the nearby farm?”
“Or what about throwing together a salad of grated carrot and apple? And ooh! How about we add some cilantro?”
“Wait, maybe you can mix this cured duck breast with some ash rolled goat cheese and fresh homegrown lettuce from the garden..”
“Yes. Good. Excellent! That sounds lovely!”
Ecstatic chopping, grating (and sipping) commenced as we set about creating the most refreshing salads we could possibly think of to battle the afternoon heat.
So without further ado here is our first creation, a quick and easy French Zucchini Salad aka Salade de Courgettes.
