Why We Love This

This zucchini salad packs in plenty of bright, fresh flavour and only requires four ingredients! Why wouldn’t it, with fresh mint, garlic and yoghurt on hand to amp things up?

It’s a light and cooling salad, perfect for a warm summer day, or basically anytime that you want to feel really good about eating something delicious AND healthy. We love to enjoy it as a refreshing side salad or a light and healthy lunch.

What is Zucchini Salad? 

Zucchini salad is such a versatile summer dish. You can prepare it in lots of different ways – with shaved zucchini ribbons, grated zucchini or even zoodles! Fresh, uncooked zucchini has such a delicate flavour and crunch, totally different to cooked zucchini. The simple natural yoghurt dressing keeps it light to enhance rather than hide the zucchini flavour.

Where We Learned This Recipe

We’d just spent a warm summer afternoon in the countryside of France, sipping gorgeous wines at Terroir Feely. Caro and Sean, the owners of the winery, took us into their kitchen to create a few tasty salads for a late lunch at the chateau.

With boxes of fresh veggies from the garden and locally sourced produce on all sides, we had plenty of options – but what to choose?

Caro left us to our own devices with a glass or two of wine and a few suggestions to help us on our way. I can still hear her enthusiasm now:

“How about grating the courgettes and mixing with some natural organic yoghurt from the nearby farm? Or what about throwing together a salad of grated carrot and apple? And ooh! How about we add some cilantro? Yes. Good. Lovely!”

Ecstatic chopping, grating (and sipping) commenced as we set about creating the most refreshing salads we could think of to battle the afternoon heat.

Et voilà ! Here is one of our tasty creations, a quick and easy Zucchini Salad recipe – also known as Salade de Courgettes.

What You’ll Need

Just four ingredients are all you need for this easy salad recipe: zucchinis, natural yoghurt, mint and garlic. We also love a sprinkling of salt and pepper to finish it off perfectly.

  • Zucchini – We recommend small to medium zucchinis for this salad, they have a brighter, fresher flavour than their bigger counterparts. Depending on your desired look for this salad, you can grate the zucchini, shave it into ribbons (using a mandolin or vegetable peeler) or make zucchini noodles using a spiralizer.
  • Natural Yoghurt – Be sure to use natural or unsweetened yoghurt for this recipe.
  • Mint – Fresh mint adds a beautiful cooling flavour which is why we love it for this summer salad. You can use any kind of mint such as peppermint, spearmint or apple mint. You can use dried mint in a pinch (pun intended!) or swap for fresh basil, chives or parsley.
  • Garlic – We recommend chopping the garlic as fine as possible, here’s a quick video tutorial to learn how.

How to make Zucchini Salad:

  1. Place zucchini (grated, shaved or spiralized) into a large serving bowl.
  2. Sprinkle with mint and garlic, then stir through enough natural yoghurt so that the desired texture is reached. The salad mixture should stick together nicely without being too runny.
  3. Season to taste with salt and pepper.

  • Always use a high-quality, unsweetened natural yoghurt for the best flavour.

FAQs

How do I choose the best zucchini?

For the best flavour in this fresh, raw zucchini salad, be sure to choose medium size zucchinis that are dark green in colour and feel firm and heavy. If they feel slightly tender or lighter than expected, they’re more than likely past their prime. Smaller zucchinis have a sweeter, brighter flavour, while larger zucchinis tend to be drier and seedier.

How long does this salad last?

This salad is best enjoyed immediately, but will still be fine to enjoy the next day if stored in the fridge. We don’t recommend storing it any longer, as the zucchini will loose its crunch and/or dry out if left too long in the fridge.

What should I serve with this salad?

Enjoy it as a light, refreshing meal all on its own or served with crusty bread, natural butter and a glass or two of chilled white wine. As a side dish, try pairing it with:
Moussaka (Greek Vegetable Bake)
Creamy Chicken Pasta Bake
Cevapi (Balkan Sausages)

Variations & Substitutes

  • For extra texture and crunch, try adding crumbled feta or sharp pecorino cheese, toasted pepitas or pine nuts.
  • To make it vegan, swap the natural yoghurt for a drizzle of olive oil and fresh lemon juice.
  • Switch up the flavour with chopped fresh basil, chives or parsley.
