Vietnamese Noodle Salad with Spring Rolls

Flavour packed vermicelli noodle salad with crispy spring rolls and nuoc mam sauce.

Made for Summer Days

You will need

Cook and drain the vermicelli. Make the nuoc mam sauce.

Layer noodles, mint and bean shoots in bowl.

Top with crispy fried spring rolls (whole or chopped).

Add cucumber, pickled carrots, crushed peanuts etc.

Serve with nuoc mam sauce on the side. Pour over and enjoy!
