Ultra creamy carbonara – just pasta, egg, pancetta + pecorino romano cheese.

You will need

Cook pasta slightly less than packet directions. Reserve some pasta water then drain.

Fry guanciale (or pancetta or bacon) until crispy. 

Stir cooked meat + oil through the pasta.

Whisk eggs with grated pecorino romano (or Parmesan).

Pour over cooked pasta and mix well.

Loosen sauce with a little pasta water until creamy and smooth.
