You will need

– eggplants – beef mince  – onion – garlic – capsicum / bell pepper – tomatoes – parsley – chilli flakes – sweet paprika – ground cumin – cinnamon – salt & pepper

Peel strips off eggplants and slice in the middle

Fry gently until softened.

Cook the beef mince, veggies and spices.

Stuff eggplants with sauce, bake for 30 mins.
