You will need

- Softened butter - Self raising flour - Sugar - Ricotta cheese - Eggs - Vanilla essence - Lemon zest - Icing Sugar

Cream butter and sugar, then mix in the ricotta cheese.

Mix the eggs, vanilla essence and lemon zest.

Stir the eggs into the ricotta mixture.

Gently fold the flour into the batter, but don't overmix.

Pour into a springform pan and flatten out the top.
