Vietnamese Rice Paper Rolls

Perfect as a light snack or healthy lunch. Pair with peanut hoisin sauce - yum!

Super Quick & Easy!

You will need

Moisten rice paper wrapper by quickly dunking into lukewarm water. Drip off excess water, pop on a plate.

Stack lettuce, mint and vermicelli towards the lower third of the wrapper. Place prawns in the top third.

Fold the bottom of the wrapper up tightly over the lettuce, mint and vermicelli.

Fold in the wrapper on both sides. 

Keep rolling up until you reach the top edge.
