Lemon Polenta Cake

This lemon polenta cake is deliciously sweet and crumbly, and so easy!

You will need

Add lemon juice to milk to make buttermilk.

Cream the butter and sugar until pale and fluffy.

Beat in the eggs one at a time.

Mix in the buttermilk, olive oil and lemon zest.

Stir in the polenta.

Gently stir in the flour until just mixed.

Pour batter into baking tin, smooth out the surface.

Bake 30 mins, then cover and bake remaining 15 mins.

Make the optional lemon glaze.

Smooth out glaze over the surface of the cooled cake.
