You will need

Marinate the chicken thigh pieces for 30 mins.

Fry the veggies to seal in their flavour and keep their shape.

Add water, boil then simmer for 15 mins. Scoop off any foam.

Add veggies, simmer 10-15 mins, then stir in coconut milk.
