OMELETTE X PANCAKE

You will need

Marinate the meat (pork, seafood or chicken)

Make the runny rice flour batter.

Cook the meat and remove from pan.

Add a few pieces of meat and a scoop of batter into pan.

Cook until edges are crispy. Top with bean sprouts.

Cover and steam to soften the sprouts.

Fold over banh xeo just like an omelette.

Optional: Serve with rice paper and fresh herbs.
