Why We Love This Recipe

We’ve always got the simple ingredients in our pantry for this dish, so it’s a perfect weeknight meal or lunch when we both don’t feel like cooking a time-consuming meal.

Being able to use Napoli sauce in a variety of ways, cuts down the cooking time on future dishes when I do a big batch. Whether it’s for pasta, pizza or on schnitzel!

They would use:

Today’s I-need-you-in-my-tummy-right-now recipe comes to you all the way from a little town in Italy known as Parma.

Parma’s the original home to such Italian delights as balsamic vinegar, prosciutto, and of course, Parmesan cheese. So naturally it’s one of our favourite places on earth.  😉

A pity for us we had a tight little window in our itinerary to get there… Less than 24 hours to jump on the right train, meet our host, see the sights, and hopefully cook an epic meal together.

In the end we were so late getting there that we almost missed out completely! :O

As I sit here writing, another weekend has come and gone and I can’t believe we’re now in our third week of being-back-home-shenanigans already. Gosh time flies when you’re having fun!

This weekend was just the relaxing break we needed after a full-on year. A chance to catch up on family happenings and spend some time in the great outdoors.

Easy Vegemite Chicken Pasta

Why We Love This Recipe

Vegemite Chicken Pasta uses simple ingredients that most Aussie’s are bound to already have in their kitchen at home.

The marinade is a stellar blend of two old favourites, honey and soy, with Japanese mirin (rice wine for cooking) to add a bit of sweetness and a dab of Vegemite for a savoury, umami kick.

The sugar in the honey and mirin help the sauce thicken quickly so your dinner is ready on the table in under 30 minutes. (Let’s be honest, most of that is marinating time anyway!)
