Smashed Cucumber Salad

Featuring smashed cucumbers, fried peanuts, & garlic-infused soy sauce.

You will need

Mix the sauce ingredients in a small bowl.

Smash the cucumber lightly with a rolling pin.

Chop cucumber into bite sized pieces.

Add salt and sugar, mix well. Set aside 5 mins to draw out liquid.

Fry the peanuts, then add to cucumbers.

Fry the garlic.

Add fried garlic to the sauce and mix well.

Pour sauce over the smashed cucumber and peanuts. Mix well.
